The beautiful lavender color of the Ube Cheesecake is stunning. The cake is about 7-8 inches in diameter and has the consistency of a lovely spongecake. It's as buoyant as promised, while not being overly sweet. Ube doesn't really taste like anything pronounced in the cake but just a lovely subtle delicious flavor. All in all the got great reviews from my friend and I (we ate about 80% of it - my husband only had one piece). Will definitely be back for more!

When I went to college just west of the NYC area, I would often end a Saturday night with friends at a local diner. It was rare that I left without having consumed a ridiculous sized hunk of New York style cheesecake.
At one of our local restaurants they had an ube soft serve with a macaroon on the side sprinkled with fruity pebbles. It worked with the sweetness of the toppings and cookie since the ube had a nice mild flavor. 😋
Wow. My taste buds are having a party. I am going to have to research Ube in our area.

love the ube icecream. Ube = purple yam. You can buy a powdered version which we turn into a dessert called Halaya which is a sort of jam :)

I'm intrigued by the concept of a "bouncy cheesecake." Google says it's a lighter, Japanese version of a cheesecake. Yum.
I would have been turned off by that gorgeous color had I not learned from you that it's totally natural. Very cool!

Found a few ice cream parlors locally that appeared in a Google search for Ube. Hoping they haven't changed flavors so I can try it out.
