I find photographing butterflies in flight to be near impossible with anything other than a wide angle lens, and if it is really wide, why bother. I keep wanting to get some nice frames of two butterflies fighting/courting/ twirling together in the air, but no joy yet.
Capturing both sides of their wings is almost as hard, but not completely. Sometimes if you shoot from 45º above or below the butterfly, you can capture a frame when their wings are mid-way between upright and horizontal. like this
My local butterflies left months ago, and all I have now are frames shot from previous seasons. The frame above was from the Butterfly Pavillion in Indianapolis a few years ago.
The frame below is from my back yard last summer, but you can see a bit of both wing surfaces of the painted lady.
