You will want to look at making a reservation ASAP once you know your dates as it does book up quickly! While I've eaten at 58 Tour Eiffel (first floor) and the view and menu were spectacular, there's also the Jules Verne Restaurant on the second level that's even more premium, or the Champagne Bar at the Top of the Eiffel Tower.
Regardless of when or where you book, make sure to arrive 2 hours early for the security protocols, as even with your guaranteed ticket to ascend at a specific time, you'll want to buffer so you aren't late!

I'd never heard of this policy, thank you for sharing! I've heard of it as it relates to the Vessel here in NYC, but as the Eiffel Tower is so historic, now I know!
