      That looks awesome! I make a version of this but with raw kale and some homemade tahini dressing.

      The dressing is super easy to make:
      - 1 cup of tahini
      - Fresh squeezed juice from 1 lemon
      - 1 garlic clove
      - A 3/4 cup of chopped cilantro
      - 2 or 3 chopped green onions
      - A little bit of pink Himalayan salt to taste
      - Some water (start with 1/2 cup) to thin it to your desired consistency

      Put all of the ingredients into a blender and blend for a minute. Add more water or salt as needed and blend some more.

      Experiment with the proportions to tweak for your taste, but you can't go wrong with this combination of ingredients. Enjoy!

      Side note: This is the result of many attempts to replicate a kale bowl from a great restaurant in San Jose called Good Karma. It's a vegan restaurant with a quirky vibe that also has an amazing draft beer list.
